- 1 ½ cups semi-sweet chocolate chips
- 1 pint vanilla ice cream (softened slightly)
- 1 cup chocolate shavings (use a peeler to grate chocolate)
- ½ cup chopped nuts (almonds or hazelnuts)
- 6 fresh cherries (for garnish)
Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream together softened butter, granulated sugar, and light brown sugar until light and fluffy, then add eggs and vanilla extract.
- In a separate bowl, whisk together flour, baking soda, and salt, then gradually mix into wet ingredients and fold in chocolate chips.
- Scoop equal amounts of dough onto the prepared sheets, spacing them 2 inches apart. Bake for 10-12 minutes until edges are golden and centers are soft. Cool completely.
- Prepare toppings by combining chocolate shavings and chopped nuts in a shallow bowl.
- Assemble sandwiches by scooping softened ice cream onto one cookie, placing another cookie on top, and rolling edges in the topping mixture.
- Freeze the assembled sandwiches for at least 30 minutes to firm up.
