Ingredients

  • 2 ripe avocados (peeled and pitted)
  • 1 cup maple syrup (Grade A, or to taste)
  • 1 tablespoon lime zest
  • 1/2 cup lime juice (freshly squeezed from 5 limes)
  • 1/4 cup water

Instructions

  1. Blend all ingredients in a high-speed blender or food processor until smooth.
  2. Taste and adjust sweetness or acidity as desired.
  3. Chill the mixture in the refrigerator for about 30 minutes.
  4. Pour the mixture into your ice cream maker and freeze according to the machine’s instructions (typically about 20 minutes).
  5. Check for the right consistency; it should hold its shape on a spoon.
  6. Serve immediately for a softer texture or freeze in an airtight container for a firmer texture.
