Honey Lavender Ice Cream

Description

A creamy and enchanting ice cream made with honey and lavender for a unique dessert experience.


Ingredients

Scale
  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup honey
  • 2 tablespoons dried lavender buds
  • 5 egg yolks
  • Pinch of salt

Instructions

  1. Pour the milk and cream into a saucepan. Add dried lavender buds and simmer over medium heat.
  2. Turn off the heat and let the lavender steep for 30 minutes.
  3. In a bowl, whisk the egg yolks and a pinch of salt until foamy.
  4. Slowly pour the lavender-infused milk into the egg mixture, stirring constantly.
  5. Pour the mixture back into the saucepan and cook over low heat until it thickens enough to coat the back of a spoon.
  6. Remove from heat and strain out the lavender buds.
  7. Chill the custard in the refrigerator until cold (preferably overnight).
  8. Churn in an ice cream maker according to manufacturer’s instructions.
  9. Freeze for a few hours before serving.

Notes

For creaminess, chill the base completely before churning and use high-quality ingredients. If ice cream hardens too much, let it sit for 5-10 minutes before scooping.
