Description
A refreshing no-bake dessert that combines tangy lemon pudding and fluffy marshmallow cream, layered between graham crackers.

- 12 graham cracker sheets (broken into 24 squares)
- 192 grams instant lemon pudding mix
- 3 1/4 cups cold milk
- 225 grams whipped topping, divided
- 140 grams cream cheese, softened
- 198 grams marshmallow creme
- Optional: Zest of 1 lemon, fresh berries, crushed graham crackers, white chocolate shavings, lemon curd
Instructions
- Line a 9×13-inch baking dish with parchment paper.
- Break graham crackers into 24 squares and place 12 in a layer at the bottom of the dish.
- Whisk instant lemon pudding mix with cold milk until thickened, then fold in 1/2 cup of whipped topping.
- Spread the lemon pudding mixture over the graham crackers and freeze for 15 minutes.
- In another bowl, blend softened cream cheese and marshmallow creme until smooth, then fold in the remaining whipped topping.
- Spread the marshmallow mixture over the pudding layer, then place the remaining graham cracker squares on top.
- Cover the pan with foil and freeze for at least 6 hours or overnight.
- Before serving, let the dessert sit at room temperature for 5–10 minutes, then lift it out using parchment and slice into squares.
Notes
For extra crunch, sprinkle crushed graham crackers or white chocolate shavings on top before freezing.
