Description

A delicious, protein-packed ice cream that combines nostalgia with health, perfect for hot days.


Ingredients

  • Unsweetened Almond Milk (340 g or 12 ounces)
  • Unflavored Whey Protein Powder (1 scoop)
  • Swerve Sugar Substitute (2 tablespoons)
  • Vanilla Paste (½ tablespoon)
  • Peppermint Extract (⅛ teaspoon)
  • Red Food Coloring (4 drops, optional)
  • Guar Gum (¼ teaspoon)
  • Crushed Starlight Mints (6 pieces)
  • Unsweetened Almond Milk (1-2 tablespoons, optional)

Instructions

  1. Blend the Mixture: Add almond milk, whey protein, Swerve, vanilla paste, peppermint extract, red food coloring, and guar gum into a blender, and blend until smooth.
  2. Freeze the Mixture: Pour into a Ninja Creami container, level off, and freeze for 24 hours.
  3. Process the Ice Cream: Once frozen, process in Ninja Creami on the “Lite Ice Cream” setting.
  4. Adjust the Texture: If dry, add a tablespoon or two of almond milk and process again.
  5. Add Crushed Mints: Scoop a well in the ice cream, add crushed mints, and use the “Mix-Ins” option to fold them in.
  6. Serve and Enjoy: Scoop into bowls and enjoy your protein-packed ice cream.

Notes

Make sure to blend thoroughly for the creamiest texture and allow 24 hours of freezing for best results.
