Description
A refreshing and vibrant blueberry lemon soda that’s perfect for sunny afternoons, packed with antioxidants and vitamin C.
Ingredients

- 27 ounces club soda
- 1 lemon (for slices and juice)
- 16 ounces fresh blueberries
- 1 cup water
- Zest from ½ lemon
- ¾ cup sugar (or sugar substitute)
- 2 tablespoons lemon juice
- 2 ounces fresh blueberries (for garnish, optional)
Instructions
- Rinse the blueberries in a bowl of water.
- Transfer the blueberries to a medium saucepan with water and lemon zest.
- Cook over medium-high heat until boiling, then reduce heat and let simmer for about 15 minutes.
- Use a fine sieve to separate juice from skins and seeds.
- Add the sugar and lemon juice back into the saucepan with the blueberry juice and bring to a boil until sugar dissolves.
- Let it bubble for an additional two minutes.
- Cool the syrup in the fridge for at least 1½ hours.
- Mix the blueberry syrup with club soda and serve over ice with fresh blueberries and lemon slices.
Notes
For a lighter drink, use sugar substitutes or raw honey. For a twist, substitute club soda with sparkling green tea.
