Instructions
- Ensure cookies are completely cooled to prevent melting ice cream.
- Scoop about ⅓ cup of ice cream onto half of the cookies.
- Top with another cookie and gently press together, allowing some ice cream to ooze out.
- Roll the edges in mini chocolate chips, sprinkles, or leave plain.
- Place sandwiches on a parchment-lined tray and freeze for at least 2 hours.
- Once solid, wrap each sandwich individually in plastic wrap for easy snacking.
