A refreshing and easy-to-make cucumber mint sorbet, perfect for summer days.
Ingredients

- 1 medium cucumber, peeled and diced
- 1 cup fresh mint leaves, rinsed
- 2 tablespoons freshly squeezed lime juice
- 2–4 tablespoons honey or agave syrup
- 1 cup water or coconut water
- A pinch of salt (optional)
- Additional fruits (optional, for customization)
Instructions
- Prepare the cucumber by peeling and dicing it into smaller pieces.
- Rinse the mint leaves under cool water and pat them dry.
- In a blender, combine the diced cucumber, mint leaves, lime juice, and your choice of honey or agave syrup. Add water or coconut water and blend until smooth.
- Pour the mixture into a freezer-safe container, leaving some space at the top, and freeze for at least 24 hours.
- Once frozen solid, use a Ninja Creami to turn the frozen mixture into sorbet according to the machine’s instructions.
- Serve the sorbet in bowls, garnished with additional mint leaves or cucumber slices if desired.
Notes
For a dairy-free version, use coconut water. You can substitute honey with agave syrup for a vegan-friendly option.
