Description

A refreshing and easy-to-make cucumber mint sorbet, perfect for summer days.


Ingredients

Scale
  • 1 medium cucumber, peeled and diced
  • 1 cup fresh mint leaves, rinsed
  • 2 tablespoons freshly squeezed lime juice
  • 24 tablespoons honey or agave syrup
  • 1 cup water or coconut water
  • A pinch of salt (optional)
  • Additional fruits (optional, for customization)

Instructions

  1. Prepare the cucumber by peeling and dicing it into smaller pieces.
  2. Rinse the mint leaves under cool water and pat them dry.
  3. In a blender, combine the diced cucumber, mint leaves, lime juice, and your choice of honey or agave syrup. Add water or coconut water and blend until smooth.
  4. Pour the mixture into a freezer-safe container, leaving some space at the top, and freeze for at least 24 hours.
  5. Once frozen solid, use a Ninja Creami to turn the frozen mixture into sorbet according to the machine’s instructions.
  6. Serve the sorbet in bowls, garnished with additional mint leaves or cucumber slices if desired.

Notes

For a dairy-free version, use coconut water. You can substitute honey with agave syrup for a vegan-friendly option.
