A delicious homemade ice cream combining chocolate and coconut flavors, packed with protein and low in added sugars, perfect for a healthy lifestyle.


Ingredients

Scale
  • 1/2 cup Fairlife skim milk
  • 1 cup unsweetened almond milk
  • 1/2 cup light coconut milk
  • 1 scoop vanilla protein powder
  • 1 tablespoon Jell-O vanilla pudding mix
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup unsweetened coconut flakes
  • 2 tablespoons semi-sweet chocolate chips
  • 1/2 teaspoon coconut oil
  • Optional toppings: nuts, fresh fruits, or more chocolate chips

Instructions

  1. Measure out the Fairlife skim milk, unsweetened almond milk, light coconut milk, vanilla protein powder, Jell-O pudding mix, vanilla extract, and salt into a Ninja Creami container.
  2. Blend these together until smooth, ensuring all the ingredients are well incorporated.
  3. Cover the container and place it in the freezer for a full 24 hours.
  4. Run the container under warm water for about 60 seconds to loosen the ice cream.
  5. Insert the container into your Ninja Creami and select the ‘Lite Ice Cream’ setting.
  6. Press ‘Respin’ until you achieve the desired creaminess if needed.
  7. Add the unsweetened coconut flakes into the center of the ice cream.
  8. Melt the semi-sweet chocolate chips with coconut oil in the microwave, then drizzle over the ice cream.
  9. Sprinkle additional coconut flakes on top and pop the ice cream back in the freezer to set briefly.
