A refreshing beverage combining brewed oolong tea, fresh strawberries, and a creamy cheese topping, perfect for summer gatherings.


Ingredients

  • 12 grams oolong tea leaves
  • 3¼ cups water
  • 3 tablespoons sugar, plus 1½ tablespoons for blending
  • 8 ounces fresh strawberries, rinsed, hulled, and cut into ½-inch cubes
  • 20 grams cream cheese, at room temperature
  • 2 tablespoons whole milk
  • ½ cup heavy whipping cream
  • 2 teaspoons sugar
  • Pinch of salt or sea salt
  • Optional: flavored syrups, mint leaves, ice

Instructions

  1. Brew the oolong tea: In a medium pot, combine 12 grams of oolong tea leaves with 3¼ cups of water. Heat it over medium heat for about 11 minutes until it approaches a boil.
  2. Strain and sweeten: Strain the brewed tea into a glass pitcher. Add 3 tablespoons of sugar and stir until fully dissolved. Allow the tea to cool to room temperature, then refrigerate for about 6 hours until chilled.
  3. Blend strawberries: In a blender, combine the chilled tea, cubed strawberries, and an additional 1½ tablespoons of sugar. Blend until smooth.
  4. Prepare the cream cheese topping: In a mixing bowl, beat the cream cheese until smooth, then add milk and continue beating. Mix in the heavy whipping cream, 2 teaspoons of sugar, and a pinch of salt until free of lumps.
  5. Assemble and serve: Pour the chilled tea into serving glasses and top with the creamy cheese mixture.

Notes

For a colder drink, serve over crushed ice and consider adding flavored syrups or mint leaves.
