Ingredients

- ½ personal sized watermelon
- 9 fresh mint leaves
- 3 tablespoons lime juice (about 1½ limes)
- ½ tablespoon sugar
- 1½ – 2 ounces light rum
- 5 ice cubes
- Additional mint leaves for garnish (optional)
- Slices of lime (optional)
- Sparkling water (optional)
Instructions
- Use a melon baller or small cookie scoop to create melon balls from the watermelon and set aside.
- Scoop out approximately 9 ounces of watermelon flesh and remove all seeds.
- Transfer the watermelon flesh to a blender, add mint leaves, lime juice, and sugar, then blend until smooth.
- Taste the mixture and adjust sweetness or acidity as needed.
- Add light rum and blend briefly to combine.
- Toss in ice cubes and melon balls into the hollowed watermelon.
- Pour the blended mojito mix into the hollow watermelon and serve immediately.
Notes
For best results, serve chilled. Garnishing with mint and lime adds visual appeal.
